200ml fresh lemon juice
500g caster sugar
For the Cocktail (produces 850ml, to serve 10)

Method
Making the Syrup: Combine all the components inside a pan, bring to a simmer, agitating to dissolve. After that, turn off the stove allowing it to reach room temperature fully. Pour to a sterilised bottle, cap it and store chilled, where it will keep for around four weeks.
Preparing the Batch Mix: Pour all the liquid ingredients into one big jug, leave to sit for 60 minutes, then pass it through best through muslin, to ensure it's fully clarified.
For serving: Measure 85ml from the cocktail base into your cocktail shaker packed with ice, gently stirring lightly for about 60 seconds to chill. Pour to a cold coupe glass or a similar vessel, garnish with some cranberries and complete it with a quick spritz of mandarin oil over the top.
